Carrot Clones
          A unique way to serve cheese and crackers. (Fun to make with kids).

      Ingredients
4 ounces cream cheese, softened at room temperature 1 cup finely grated sharp Cheddar cheese, divided 1/2 cup grated Swiss cheese 2 tablespoons dry sherry 1/2 teaspoon salt 1/2 teaspoon smoked paprika Oval shaped crackers Curly parsley springs

      The Recipe
In a food processor, cream together cream cheese, 1/2 cup of the Cheddar, Swiss cheese, sherry, salt and pepper. Refrigerate 30 minutes or more, so it firms up and is easier to work with. take a teaspoonful of the mixture and roll it into a rough carrot shape. Roll it into the remaining Cheddar and roll it again until it is a smooth, carrot shape. Place on an oval cracker, then (just before serving), stick a little sprig of parsley in the end. Makes about 25.
