Burnt Honey-Lemon Chicken
          

Sometimes mixtakes have very happy outcomes.


      Ingredients

2 tablelspoons olive oil

4 skin-on, bone-in chicken breast halves

Juice of two large lemons plus zest (about 2/3 cup)

1 teaspoon salt

2 teaspoons pepper

4  - 6 tablespoons honey


      The Recipe

Preheat oven to 400 degrees F.  Drizzle olive oil in the bottom of a roasting pan and arrange chicken on top.  Pour lemon juice on top, sprinkle the zest on, and season with salt and pepper.  Cover with foil and roast 40 minutes.  Chage oven to broil.  Remove foil and drizzle tops with honey.  Broil until honey starts burning.  Serves 4.
