Amish Baker Emma Miller's Maple-Iced Cookies
A visit to Amish country in Burton, Ohio - all about the maple syrup industry - and a great cookie recipe.
Ingredients
4 eggs
1 cup sugar
1 cup brown sugar, packed
1 1/2 cups butter, room temperature
1 cup milk
5 cups flour
2 teaspoons baking soda
4 teaspoons baking powder
1 1/2 teaspoons salt
3 tablespoons maple flavoring (extract)
Icing:
2 cups confectioners' sugar
1/4 cup pure maple syrup
2 tablespoons melted butter
The Recipe
Preheat oven to 375 degrees F.
In a mixer, blend together eggs, both sugars and butter. Add flour, baking soda, baking powder, milk, salt and maple flavoring. Blend well. Place scoops on ungreased baking sheets (about 1 1/2 tablespoons worth). Dip teaspoon in water and press tops gently to flatten. Bake 10 minutes. Allow to cool of baking racks.
Make icing: Place confectioners' sugar in a medium bowl. By hand, blend in maple syrup and butter. Add more syrup or powdered sugar if needed to adjust consistancy. Frost cookies. Makes 130. Recipe easily halved.
