Salmon Paprikash
          

Salmon steaks burried in a paprika-sour cream sauce and dotted with scallions and green pepper.


      Ingredients

1 tablespoon olive oil

3 scallions, thinly sliced (include a little green)

1/2 green bell pepper, finely chopped

2 tablespoons Hungarian paprika (medium-hot is good)

1 teaspoon salt

1/4 teaspoon pepper

16 ounces sour cream

4 salmon steaks, 1 1/4" thick

Juice of 1/2 lemon


      The Recipe

Prehat oven to 400 degrees F.  Brush a broiler pan or roasting pan with a little oil.

In a small saucepan, heat the tablespoon of olive oil and cook scallions and green pepper over medium heat just until softened.  Add paprika and stir 1 minute.  Remove pan from heat and stir in salt, pepper and sour cream.

Place salmon steaks in prepared pan.  Spread sauce over and squeeze lemon juice over.  Bake about 20 minutes, or until salmon is cooked through and sauce is bubbling.  Serves 4.
