Chicken Stir-Fry with Kale and Walnuts
Tasty, simple and healthy. I make this often.
3 tablespoons butter
1 1/2 cups coarsely chopped walnuts
1/2 teaspoon salt
3 tablespoons olive oil
2 large boneless, skinless chicken breast halves, cubed
4 cloves minced garlic
1/2 pound kale leaves
1 to 1 1/2 cups chicken or vegetable stock
2 - 3 tablespoons lemon juice
1 teaspoon pepper
Melt butter in a large skillet. Lightly toast walnuts and season with salt. Remove from pan and set aside.
Add olive oil to pan and cook chicken pieces until almost done. Stir in garlic and toss. Add kale, and with two large spoons, fold in to the mixture. Add chicken stock and let simmer about ten minutes until kale is broken down and liquid is almost gone. Stir in lemon, pepper and walnuts. Serves 4.
