Savory Indian Dusted Chicken
A blending of Indian-inspired spices form a delicious crust to turn everyday chicken into an exotic dish.
6 chicken breasts (bone-in, bone-out, with or without skin, whatever you prefer)
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon ground cloves
1 teaspoon salt
1/2 teaspoon ground white pepper
Preheat oven to 400 degrees. Arrange chicken in roasting pan, cover with heavy foil and bake 40 minutes. Meanwhile, mix together all spices.
Remove foil from chicken and sprinkle a nice coating of the spice mixture over the chicken. Very carefully, spoon a little of the juices over so the spices won't burn (but don't wash them off). Return chicken to oven and bake, uncovered, about 10 - 15 more minutes until crust forms and a wonderful aroma starts filling your kitchen. Good with herbed rice and a vegetable.
