Molasses Chicken on the Grill

It looks blackened and glossy and very cool.


8 pieces chicken
½ cup molasses
¼ cup ketchup
¼ cup soy sauce
1 teaspoon minced garlic
2 tablespoons coarsely ground black pepper

      The Recipe

Place chicken on hot grill.  (When grilling chicken, never boil it first - it's just not necessary and makes for dry chicken.)  In a small bowl, mix together remaining ingredients.  After a few minutes when the chicken is just getting going, brush on half of the molasses sauce. The sugar in the molasses will caramelize and keep the chicken moist. Cook till almost done and brush on rest of sauce right at the end. Serves 4 – 8.
