Chicken Kabul: A Recipe of Afghanistan
I think often about the people of Afghanistan who are anti-Taliban, especially when women had no rights. In better days, the traditional diet of the Afghans would include much tea, lamb kebabs, eggplant, lentils, meat and tomato sauces, baklava and pistachio cookies. Yogurt is a staple and this recipe features yogurt as a marinade.
For 4 - 6 boneless, skinless chicken breast halves,
In a large bowl, mix together :
2 cups plain whole milk yogurt
3 garlic cloves, finely minced
4 tablespoons freshly squeezed lemon juice
1 teaspoon salt
1/4 teaspoon red pepper flakes
Add chicken to bowl and coat well. Cover and refrigerate overnight.
Shake excess coating off chicken and grill or broil until lightly browned. Do not overcook.
Option: Top with toasted pistachios before serving.
