Burnt Honey-Lemon Chicken
Sometimes mistakes have very happy outcomes.
2 tablespoons olive oil
4 skin-on, bone-in chicken breast halves
Juice of 2 large lemons plus zest (about 2/3 cup)
1 teaspoon salt
2 teaspoons pepper
4 - 6 tablespoons honey
Preheat oven to 400 degrees F. Drizzle olive oil in the bottom of a roasting pan and arrange chicken on top. Pour lemon juice and zest over the top. Season with salt and pepper. Cover and roast 40 minutes. Change oven to broil. Remove cover off chicken and drizzle tops with honey. Broil until honey starts burning. Serves 4.
