Salted Caramel Cheddar Chicken
          

My latest invention was a smash hit!


      Ingredients

4 skinless, boneless chicken breast halves

About 6 tablespoons mayonnaise

1 cup sugar

6 tablespoons butter, room temperature

1/2 cup cream

1 teaspoon coarse salt

Juice of 1/2 lemon

8 slices sharp Cheddar cheese


      The Recipe

Prepare chicken by brushing both sides with mayonnaise.  Place on medium grill and sear both sides.  Cook until chicken is done (10 - 15 minutes).

Meanwhile, make caramel sauce:  Place sugar in a medium saucepan and cook over medium heat, stirring, until it melts and becomes a thick, amber liquid.  Stir in butter.  Slowly add cream, stirring.  Allow to boil one minute.  Remove from heat and stir in salt and lemon.

Pour some of the sauce into a bowl (there may be some left over that you can put over ice cream and you don't want to contaminiate the brush).  Brush both sides of chicken with caramel.  Top each piece with two slices of cheddar.  Close the grill and cook just a minute or two until cheese melts.  Serve with additional sauce.  Note:  You can also prepare this dish in a frying pan, or in the oven.  Serves 4.
