White Chocolate-Cheddar Chicken
          

It might sound weird, but trust me, it's fabulous!


      Ingredients

4 boneless, skinless chicken breast halves

8 slices sharp Cheddar cheese

2/3 cup white chocolate chips

3 tablespoons vegetable oil

3 tablespoons lemon juice

1 teaspoon salt


      The Recipe

Preheat oven to 400 degrees F.  Put a little olive oil in a roasting pan and arrange chicken in it.  Lightly salt and generously pepper the chicken.  Roast 35 minutes, turning once.

Meanwhile, make sauce:  Melt white chocolate in a double boiler at lowest flame.  Stir in vegetable oil to thin.  Add lemon juice and salt and mix well.  Turn off burner.

Remove chicken from oven and top each piece with two slices of Cheddar cheese.  Switch oven to broil, return chicken and cook just a couple of minutes until cheese melts and lightly browns.  Arrange on a serving platter and top with white chocolate sauce.  Serves 4.
