Blue Cheese-Crusted Wings with Red Wine-Balsamic Glaze
          

I love playing with wings.  Here's my latest.


      Ingredients

4 pounds wings

1 1/2 teaspoons EACH salt and pepper

3 cups semi-sweet red wine

3/4 cup Balsamic vinegar

3 tablespoons butter

1 1/2 cups crumbled blue cheese


      The Recipe

Preheat oven to 400 degrees F.  Arrange wings in a single layer in roasting pan.  Season with salt and pepper.  Roast, uncovered 35 minutes, or until browned.

Meanwhile, make glaze:  In  medium saucepan, pour red wine and balsamic vinegar.  Bring to a boil and let reduce by half (this will take 15 minutes or so).  Remove from heat and stir in butter until it melts.

Remove wings from oven.  Turn oven to broil.  Sprinkle tops of wings with blue cheese.  Broil a few minutes, or until the cheese melts and lightly browns.  Transfer to a serving bowl and top with the reduction sauce.  Serves about 4.
