Pumpkin Cornbread
          

The best cornbread mix in the world is good old Jiffy Corn Muffin Mix.  Try it with pumpkin.


      Ingredients


1 package Jiffy Corn Muffin Mix
2/3 cup canned, pureed pumpkin
1 heaping teaspoon brown sugar
¼ teaspoon cinnamon


      The Recipe

Preheat oven to 400 degrees.  Prepare batter according to package instructions. Add pumpkin, brown sugar and cinnamon. Mix gently into batter and let rest 4 minutes. Scrape batter into buttered 8 x 8 baking dish and bake 20 minutes or until done
