Cheap White Bread Tricks

Three easy recipes using cheap, white bread:  Rolled Sandwiches, Cheesy Dough Balls, Scrambled Egg Cupcakes.

      Ingredients

For Rolled Sandwiches:  Cheap white bread, softened butter, tuna salad (or other filling).

For Dough Balls:  Cheap white bread, melted butter, garlic powder, grated Swiss cheese.

For Scrambled Egg Cupcakes:  Cheap white bread, softened butter, eggs, grated Cheddar cheese.

      The Recipe

For each Rolled Sandwich:  Remove crusts from bread, flatten each slice with a rolling pin, spread with a little butter, fill with 2 tablespoons tuna salad and roll up tightly.  Store, covered in refrigerator.

For each Dough Ball:  Preheat oven to 450 degrees F.  Melt 1 teaspoon butter for each and stir in a pinch of garlic powder.  Remove crust from bread, place a large pinch of grated Swiss in the center, fold each corner towards the middle, place in the palm of your hand and squish tightly to make a dough ball.  Roll in garlic butter, place on baking sheet and bake 10 minutes.  Serve warm.

For each Scrambled Egg Cupcake:  Preheat oven to 350 degrees F.  Remove crust from bread, spread with one teaspoon softened butter.  Place butter-side down in muffin tin, forming a cup.  Bake 12 minutes.  Meanwhile, melt butter in skillet, whisk egg and scramble.  Remove bread cup from oven and change oven to broil.  Fill bread cup with scrambled egg and top with 1 tablelspoon grated Cheddar.  Return to oven 1 minute, or until cheese is golden and bubbly.  Figure 2 per person.

Note:  Process bread crusts in food processor to make fresh bread crumbs.  Or, feed them to the birds.
