3 medium onions

8 tablespoons butter

5 - 6 tablespoons brown sugar, divided

2 large tomatoes

1 loaf sourdough bread, halved lengthwise

Preheat oven to 475 degrees F.  Coarsely chop onions.  Melt butter in a large skillet and saute onions until tender and golden, about ten minutes.  Stir in 2 tablespoons brown sugar and set aside.  Slice tomatoes thinly.  Arrange bread on a baking sheet, and top each uncut side with the onion mixture.  Arrange tomatoes on top and sprinkle on remaining brown sugar.  Bake ten minutes.  Switch oven to broil and cook another few minutes until the top browns a little.  Allow to cool slightly before slicing into 1-2" strips.  Serves 4 - 6 as an appetizer.
