Polo's St. Barth Galettes (French fried biscuits)
          

A traditional recipe from this tiny island.  Can be stuffed with anything, sweet or savory.


      Ingredients

3 cups flour

3 teaspoons baking powder

1 teaspoon salt

1 cup (or more) water

Vegetable oil for frying


      The Recipe

Place flour, baking powder and salt in a large bowl.  Mix with hands.  Add 1 cup water (more, if necessary) and continue mixing with hands until dough is slightly sticky (you can also add more flour if needed).  Remove from bowl onto a floured surface and divide into thirds.  Roll each third into a log about 1 1/2" thick.  Cut each log into 5 - 6 pieces.

Re-flour surface.  Take each piece and knead a little.  Form into smooth balls and place on floured dish.  Let rest 15 minutes.

Heat a thin layer of vegetable oil in a large skillet.  Flatten each biscuit and fry on both sides until golden brown (about 2 minutes per side).  Place in paper-towel lined bowl to absorb oil.  Makes about 18 galettes.  You can butter them and add jam - or stuff them with tuna or chicken salad - or just about anything you can think of.
