Parmesan-Brown Sugar Crusted Tomato Slices
Tomatoes are one of the miracle foods health-wise and while waiting for your summer garden tomatoes, this is a good recipe for average quality tomatoes
4 large tomatoes
1/4 cup brown sugar
1/4 cup grated Parmesan cheese
Trim tomatoes and slice into thick slices (each tomato should yield 3 slices). Arrange on baking sheet.
In a small bowl, mix together brown sugar and Parmesan cheese. Sprinkle on top of each tomato slice.
Broil tomatoes 3 minutes or until top bubbles. Make sure tomato doesn't get mushy. Serves 4.
Serve warm alongside chicken or fish or steak or pork or just about anything.
