Stuffed Red Bell Peppers with Smoked Gouda
This is such a pretty dish – roasted bright red bell peppers stuffed with pieces of orange bell pepper, garlic and smoked mozzarella cheese.
2 large red bell peppers
1 large orange bell pepper
4 cloves garlic, minced
1/3 pound smoked Gouda cheese, diced
Preheat oven to 425 degrees. Slice red peppers in half horizontally, clean out seeds and membrane and place in a roasting pan cut side up. Cut the orange pepper into about 1” pieces. Stuff the pieces into each of the red pepper halves. Drizzle with olive oil and season with salt and pepper. Roast 20 – 25 minutes or until lightly browned and tender. Remove from oven and sprinkle each with minced garlic. Divide the cheese cubes evenly and stuff them in the peppers.
Return to oven for 10 minutes, or until cheese is melted and lightly browned. Makes 4 servings (2, if it's a vegetarian main course).
Notes: Bell peppers come in such beautiful colors – feel free to use any combination. I don't use green ones because they aren't as sweet as the others. This is also a great dish to make for a large gathering, especially if you use a lot of different colored peppers – what a presentation!
