For each serving: Trim off each end off the tomato and cut into 4 slices. Pat each dry with paper towels.
Lay the bottom slice of the tomato on a salad plate. Top with mayonnaise and arrange a few slices of avocado on top. Season with salt. Add another tomato slice. Spread with hummus and thin slices of buffalo mozzarella cheese. Top with another tomato slice. Spread pesto on top and finish off with the last tomato slice. Put a wooden skewer through the middle and decorate the top with a cherry tomato.
Drizzle with a little vinaigrette. Serve room temperature.
