1 large, whole cauliflower, trimmed
2 tablespoons vegatable oil
1 medium onion, chopped
2/3 cup sweetened flake coconut
2 tablespoons fresh lemon juice
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
5 tablespoons milk
Steam cauliflower in steamer pot with water, covered, over medium heat 15 minutes, or until fork tender.
Meanwhile, heat vegetable oil in medium saucepan. Add onion and cook 5 minutes, or until softened. Add coconut and cook, stirring, until coconut is light brown. Transfer to food processor, add lemon juice and spices and process, scraping sides until mixture is of fine consistency. Mix in milk. Transfer mixture back to saucepan and heat through on very low heat.
To serve: Place steamed cauliflower in bowl and spoon coconut sauce over. Serves 4 - 6.
