Delicious Spinach Pudding

Golden, puffy and eggy.  A delicious spinach side dish that won't make you gag like when you were a kid.


6 tablespoons butter

1/2 lb. fresh spinach leaves, chopped

1/4 teaspoon grated nutmeg

3/4 teaspoon salt

1/4 teaspoon pepper

1/4 cup grated Parmesan cheese

1 1/2 cups milk (skim or regular is fine)

4 eggs, beaten

2 slices soft bread (white or wheat), processed in food processor

Preheat oven to 350 degrees F.  Butter an 8" casserole dish.

In a large saucepan, melt butter, add spinach and cook, just until wilted.  Remove from heat.  Stir in remaining ingredients.  Pour into prepared casserole dish and bake 50 - 55 minutes, or until top is golden and pudding is set.  Serves 6.
