Cauliflower Toupee

Steamed whole cauliflower with a tasty breadcrumb coiffure.


1 whole cauliflower, washed and trimmed

1 stick (1 cup) butter

1/2 cup dry bread crumbs (Italian or plain)

4 hard-boiled eggs, chopped

1/2 teaspoon salt

1/2 teaspoon pepper

      The Recipe

Steam cauliflower until tender, but not overcooked (so it doesn't fall apart), about 15 minutes or so.

Meanwhile, melt butter over a medium heat in a small saucepan.  Stir in bread crumbs and cook, stirring, about a  minute.  Add eggs, salt and pepper and heat through over low heat.

Transfer cauliflower to a bowl or platter.  Place large spoonfuls of the breadcrumb mixture all over the cauliflower, patting down with your hands, until the whole thing is 'frosted'.  Scoop out servings with a large spoon.  Serves 4.
