Ingredients
4 large potatoes, peeled and cut into chunks
1/2 stick butter, softened
2 tablespoons cream
2 tablespoons sugar
1/2 teaspoon cinnamon
1 egg
1 1/2 cups unsweetened applesauce
The Recipe
Preheat oven to 375 degrees. In a large saucepan, boil potato chunks until tender, about 15 minutes. Drain in colander and return to saucepan. Immediately add butter and cream and beat with electric mixer until smooth. Stir in sugar, cinnamon, egg and applesauce. Put mixture in a buttered casserole dish.
Bake, uncovered, 25 minutes or until top is lightly browned. Serves 4 – 6. Tastes great with ham steaks, pork roast or chicken - or standing at the kitchen sink and eating it right out of the dish when no one is looking.
