Lousy Nectarine Apple Sauce
          

How to turn crummy nectarines into a delicious side dish.


      Ingredients

8 nectarines

1 1/2 cups water

1/3 cup brown sugar

1 1/2 cups plain apple sauce

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

Pinch of salt

1/4 teaspoon cayenne pepper


      The Recipe

Fill a large saucepan 3/4 full with water and bring to a boil.  Drop nectarines into water with a slotted spoon for ten seconds.  Remove, allow to cool slightly and remove peels.  Cut into small chunks, discarding pit.

Place nectarine pieces in a large pot, and add water and brown sugar.  Bring to a boil, cover, and reduce heat to simmet.  Cook twenty minutes.

Puree nectarines right in the pot with an electric mixer or immursion blender.  Stir in apple sauce, cinnamon, nutmeg, salt and cayenne.  Allow to rest for a few minutes.  Serve slightly warm.  Serves 6.  NOTE:  Not only does it go well with ham, grilled pork chops, chicken and fish - but even over a bowl of vanilla ice cream.
