A Basket of Sunshine
          

Yukon gold potatoes, brilliant orange bell peppers and sweet Vidalia onions make a delicious trio of taste, enhanced by a wonderful spice called turmeric.  Cooked in a grilling basket.


      Ingredients

  4 large Yukon gold potatoes, cut into large chunks
  2 orange bell peppers, trimmed and cut into large chunks
  2 Vidalia sweet onions, trimmed and cut into large chunks
  2 tablespoons dark sesame oil
  2 teaspoons ground turmeric
  Salt and pepper to taste


      The Recipe

Place potatoes in a large glass bowl, add a little water, partially cover and microwave until tender but firm (about 10 minutes).  Drain off water and add to bowl the bell peppers and onions.  Drizzle with sesame oil, sprinkle with turmeric and salt and pepper and toss gently to coat evenly.
Transfer to a grilling basket and grill, tossing occasionally, until vegetables are tender and lightly browned.  The potatoes and onions will absorb the brilliant yellow of the turmeric and the sesame oil adds a rich, nutty flavor.  Serves 4 – 6.  It makes a beautiful side dish, but I could eat this as a main course with a little pita bread.
Note:  This can also be roasted in an oven; transfer bowl of spiced vegetables to a roasting pan and roast at 400 degrees for about 30 minutes, turning occasionally.
