Burnt Carrots
          

A successful accident in the kitchen.  I thought my brown sugar roasted carrots were a failure because I burned them a little, but as it turned out, the brown sugar was actually the thing that burned and they were delicious.


      Ingredients

8 - 10 large carrots, trimmed and peeled
Olive oil
Juice of 1 large lemon
Brown sugar


      The Recipe

Cut carrots into large French fry-sized pieces. Place in large glass bowl with a little water, cover and microwave until tender, about 10 - 15 minutes. Drain and arrange in a single layer in a roasting pan. Drizzle carrots with just a little olive oil and the lemon juice. Season with salt and pepper. Sprinkle a little brown sugar on top.
Broil until carrots are lightly browned and sugar is slightly burned. Serve alongside a piece of fish for a pretty darned healthy meal.
