Indian Roasted Cauliflower with Almonds and Dates

A fantastic way to make bland cauliflower amazing.


1 head cauliflower, cut into florets

2 tablespoons vegetable oil

2 tablespoons garam masala

1/2 teaspoon ground cloves

1 teaspoon salt

2 tablespoons butter

1/2 cup slivered almonds (+1/4 - 1/2 teaspoon salt)

1/2 cup chopped dates

      The Recipe

Preheat oven to 450 degrees F.  Place florets in a bowl with a little water and microwave 6 - 7 mnutes, or until fork tender.

Arrange in roasting pan and toss with vegetable oil.

Mix together garam masala, cloves and salt in a small bowl and sprinkle over cauliflower.  Roast about 4 - 5 minutes.

Meanwhile, in a small skillet, melt butter.  Add almonds and salt and cook, stirring until lightly browned.  Stir in dates.

Transfer roasted cauliflower to a bowl and top with almond mixture.  Serves 4.
