Pork Rind Lemon-Pepper Potatoes
          

Oven roasted with a drizzle  of tomato butter and a topping of crushed pork rinds.


      Ingredients

2 pounds golden potatoes, chunked

1/4 cup olive oil

1 teaspoon salt

2 teaspoons pepper

3 tablespoons lemon juice

3 ounce bag of pork rinds

5 tablespoons butter

2 tablespoons tomato paste


      The Recipe

Preheat oven to 400 degrees F.  Place potatoes in a roasting pan.  Add olive oil, salt, pepper and lemon juice.  Mix with a large spoon.  Roast 30 - 35 minutes, or until tender and browned.

Meanwhile, process pork rinds in a food processor until finely chopped.  Melt butter in a medium bowl in food processor and stir in tomato paste.

Remove potatoes to a serving platter.  Spoon tomato butter over and mix well.  Sprinkle with pork rind bits.  Serves 6.
