Marigold Pasta with Shrimp
          

You'll get a lot of ooo's and ahhh's with this one. Make sure the marigolds you use haven't been treated with anything toxic.


      Ingredients

8 ounces small shell pasta
1 large onion, chopped
2 cups white wine
Salt and pepper to taste
1 1/2 lbs. raw medium shrimp, shelled
3 tablespoons marigold petals, rinsed
Tomato slices for garnish


      The Recipe

Put pasta on to boil. Meanwhile in a large skillet saute onion in olive oil until soft. Add wine, bring to a boil and simmer until reduced by half. Season with salt and pepper and add shrimp. Cook 5 minutes or until shrimp is pink. Add cooked, drained pasta and marigold petals. Toss well and serve immediately, garnishing plates with tomato slices. Beautiful, isn't it, with the white pasta, orange shrimp, yellow petals and red tomatoes...Serves 4.
