Lemon Salmon with a Brown Sugar Crust
Salmon is one of my top ten foods. I could eat it nearly as often as chicken. I prefer the big fillets rather than the steaks with the center bone - I think you get more bang for your buck. All you need is three main ingredients and about 20 minutes to create one fine salmon recipe.
Ingredients
1 salmon fillet (1 ½ - 2 pounds)
Juice of 4 lemons
½ cup brown sugar
The Recipe
Brush a salmon fillet with olive oil and place in large roasting pan. Squeeze tons of fresh lemon juice on and sprinkle with salt and pepper. Broil about 15-20 minutes in top third of oven or until cooked through. Do not turn. Remove from oven and sprinkle top all over with brown sugar. Return to broiler and cook until sugar melts and starts to brown. Serve with a great tomato salad and a green vegetable.
