Brown Rice with Salmon and Spinach
          

A delicious, healthy main course meal.


      Ingredients

1 ½ lbs. salmon fillet
2 tablespoons Cajun seasoning
1 lb. whole grain brown rice
½ lb.fresh spinach, washed and coarsely chopped
4 cloves garlic, minced
About 1½ cups chicken or vegetable broth


      The Recipe

Preheat oven to 400degrees. Drizzle some olive oil in a roasting pan. Place salmon in pan and sprinkle top with Cajun seasoning. Roast, uncovered 20 minutes, or until cooked through. Allow to cool enough to handle.
Meanwhile, prepare rice according to box directions (mine took 30 minutes).
Drizzle olive oil in a large skillet and sauté spinach with garlic until spinach wilts, about 3 minutes. Crumble cooked salmon in the pan along with the broth and bring to a boil. Simmer 5 minutes. Stir in cooked rice and toss well, simmering a few minutes more or until the rice absorbs the liquid. Adjust seasonings. (This should be nice and moist, but not soupy.) Serves 4 – 6.
Notes: Suggested side dish – a simple green salad. Also, instead of fresh spinach, you can buy 1 box of frozen chopped spinach – thaw and squeeze dry before cooking.
