Spicy Sesame-Orange Catfish
Upscale grocery stores will carry bottled hot sesame oil, which is so savory, I could drink it like a beverage.
Ingredients
2 – 3 tablespoons hot sesame oil
4 catfish fillets
1 orange
The Recipe
Place oven rack in center of oven and preheat to broil. Pour hot sesame oil in a roasting pan and coat each piece of catfish with it. Season fish with salt. Grate the orange part of the orange rind right over fish. Cut orange into eight thin slices. Arrange two slices on top of each catfish fillet (this will protect the zestfrom burning). Broil fish about 20 minutes, or until fillets are cooked through and orange slices are burned. Remove orange slices and serve. Serves 4.Good with steamed asparagus topped with grated Parmesan cheese.
