Tuesday Night Lobster Mashed Potatoes
          

The perfect splurge.  Because you're worth it.


      Ingredients

5 large Idaho potatoes, peeled and chunked

Chicken stock

4 tablespoons butter, softened

1/4 cup heavy cream

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon tumeric

4 scallions, thinly sliced

3 cloves garlic, minced

2 cups lobster meat, cut into small pieces

Juice of 1/2 lemon

Tomato slices for garnish


      The Recipe

In a large pot, boil potatoes in half water, half chicken stock until tender.  Drain and return to pot.  Add butter, cream, salt, pepper and tumeric.  Mix with electric mixer until smooth.

Meanwhile, in a medium skillet, melt a little butter with olive oil.  Saute scallions a few minutes until tender.  Add garlic and lobster meat and heat through.  Remove from heat and stir in lemon juice.  Mix 2/3 of the lobster mixture into the mashed potatoes.  To serve:  Pile lobster mashed potatoes on individual serving plates, top with more lobster and garnish with tomatoes.  Serves 4.
