Mexican Cinnamon-Chili Catfish
          

Roasted with lemons and topped with a flavor-packed crust.


      Ingredients

6 - 8 catfish fillets

One large lemon

2 teaspoons ground cinnamon

2 teaspoons chili powder

1/8 teaspoon granulated garlic

1 teaspoon salt


      The Recipe

Preheat oven to 425 degrees F.  Arrange catfish in a roasting pan in some olive oil, coating both sides.  Slice lemon and places slices over the fish.  Roast 20 minutes.

Meanwhile, in a small dish, mix together cinnamon, chili powder, garlic and salt.  

Sprinkle spice mixture all over the top of the catfish.  Tip pan to one side and spoon the lemon-oil over the top.  Roast another five minutes.  Serves 6.
