Scallops with Marmelade Butter and Mint
          

A lovely dish on a bed of quinoa


      Ingredients

Quina, rice or pasta

3/4 cup marmelade

5 tablespoons butter

1/3 cup chopped fresh mint

1/3 cup white wine

2 tablespoons olive oil

2 pounds sea scallops

2 teaspoons EACH salt and cayenne pepper


      The Recipe

Prepare quinoa, pasta or rice for four and set aside.

Make sauce:  In a small saucepan, melt marmelade with butter.  Stir in mint, butter and wine.  Allow to cook down slightly and set aside.

Heat olive oil in a large skillet.  Season scallops on one side with 1 teaspoon EACH salt and cayenne.  Place in hot oil salt-side down and cook over medium heat about two minutes.  Season the second side with remaining salt and cayenne and turn.  Cook two or three minutes more.  

Arrange quinoa on a large platter.  Place scallops on top.  Drizzle with a little of the seasoned olive oil.  Pour marmelade sauce over.  Serves 4.
