Dragon Fruit and Kiwi Dessert Cups
          

Beautiful and impressive - and only three ingredients.


      Ingredients

2 dragon fruit, slightly soft to the touch

3 kiwi, peeled and diced

1/2 cup heavy whipping cream

1 - 2 tablespoons sugar


      The Recipe

Slice dragon fruit in half lengh-wise.  Run a knife around the meat of the fruit and dice it right in the shell.  Place fruit in a medium bowl, along with kiwi.  Place about 4 tablespoons of the fruit mixture in reserve for presentation.

Whip cream with an electric mixer until stiff peaks form.  Add sugar and blend.  Gently fold cream into main bowl of fruit.  Stuff each dragon fruit shell with fruit and top with reserved fruit pieces.  Serves 4.  Note:  Can be refrigerated up to a few hours before serving.
