Apple Butter Pie

It looks a lot like a pumpkin pie, but here's something a little different (apple butter: it's not just for toast anymore!).

Ingredients

1/2 cup sugar
2 tablespoons cornstarch
1 cup apple butter (you can find jars of it on the jelly aisle)
2 eggs
3/4 cup milk
3/4 cup heavy cream
1 uncooked pie crust

The Recipe

Preheat oven to 350 degrees. In a large bowl, combine all ingredients except crust and mix well.
Pour filling into the pie crust and bake 55-60 minutes, or until set. Let cool completely before serving.
Top with whipped cream or my favorite, coffee ice cream.
