Famous Chocolate Wafer Cookie Cake
This is the birthday cake most often requested in my family. It's layers of thin chocolate wafers softened with real whipped cream - only 3 ingredients!
3 half-pint containers heavy whipping cream
2 tablespoons sugar
2 - 3 sleeves Nabisco Famous Chocolate Wafers
In a large bowl, whip 2 of the containers of cream until stiff, adding 1 tablespoon of sugar right at the end. (It won't be very sweet, because you want the sweetness to come from the cookies).
Spread about a heaping teaspoon of whipped cream on a chocolate wafer and repeat procedure until you have a stack of about 6. Make lots of stacks!
You will occasionally find a broken wafer: Dip in whipped cream and eat.
On a rectangular platter, lay 2 - 3 stacks together on their ends, forming rows of the stacks. Whip the remaining cream, once again sweetening with 1 tablespoon of sugar. With a rubber spatula, frost entire cake with whipped cream.
Refrigerate at least 5 hours or overnight, uncovered or loosely covered with foil. Before serving, I traditionally sprinkle M & M's over the top. Make sure to slice it at an angle to get the layered look.
Note: Nabisco Famous Chocolate Wafers can be found at most grocery stores, but sometimes they're in the ice-cream topping aisle. You may have to ask.
