Amish Baker Emma Miller's Maple-Iced Cookies
          

She shares her secret family recipe for cake-like cookies with sweet maple syrup icing.


      Ingredients

4 eggs

1 cup sugar

1 cup brown sugar, packed

1 1/2 cups oleo or butter, room temperature

1 cup milk

5 cups flour

2 teaspoons baking soda

4 teaspoons baking powder

1 1/2 teaspoons salt

3 tablespoons maple flavoring

For icing:

2 cups confectioners' sugar

1/4 cup pure maple syrup

2 tablespoons melted butter


      The Recipe

Preheat oven to 375 degrees F.

In a mixer, blend together eggs, both sugars and butter.  Add flour, baking soda, baking powder, milk, salt and maple flavoring.  Blend well.  Place scoops on ungreased baking sheet (about 1 1/2 tablespoons worth).  Dip teaspoon in water and press tops gently to flatten.  Bake ten minutes.  Allow to cool on baking racks.

Make icing:  Put 2 cups powdered sugar in a medium bowl.  By hand, blend in maple syrup and butter.  Add more liquid or powdered sugar if needed to adjust consistancy.  Frost cookies.  Makes 130 (recipe easily halved).
