Golden Apple Custard Pie
          

A pinwheel of yellow apple slices embedded in a rich custard pie.


      Ingredients

1 tablespoon softened butter

1 9" pie crust, unbaked

2 yellow apples, sliced

3 eggs

1 1/2 cups milk

1/2 cup light cream

1 teaspoon vanilla extract

1/2 cup sugar (reserve 2 teaspoons)

1/2 teaspoon grated nutmeg

1/2 teaspoon salt


      The Recipe

Preheat oven to 400 degrees F.  Butter the bottom of the pie crust and arrange apple slices in an overlapping pinwheel design.  In a large bowl, whisk together eggs, milk, cream, vanilla and all but 2 teaspoons of the sugar.  Carefully pour mixture over the apples.

Sprinkle remaining sugar on top, then nutmeg, then salt.

Place pie in a roasting pan and pour boiling water to reach halfway up the side of the pie.  Place in oven and bake 40 minutes.  Reduce oven to 300 degrees F. and bake 20 minutes more, or until custard is set.  Allow to cool completely before slicing.  Store in refrigerator.  Serves 6.
