Cashew Plum Crumble

Try saying that fast three times.


8 ripe plums, pitted and sliced into 1/4" slices

Juice of 1/2 lemon

2 tablespoons Amaretto

1 cup flour

2/3 cup brown sugar, packed

1/2 cup quick-cooking (not instant) oatmeal

1/2 cup chopped salted cashews

1 stick (1/2 cup) sweet (unsalted) butter, cut into small pieces

Sweetened whipped cream

      The Recipe

Preheat oven to 375 degrees F.  Arrange plum slices in large casserole dish (no need to butter).  Squeeze lemon over, then drizzle Amaretto on top.

Make crumble:  In a medium bowl, mix together flour, brown sugar, oats and cashews with hands.  Sprinkle pieces of butter over, and with hands, work it until the butter is incorporated into the dry ingredients.  Spread evenly on top of plums.  Bake 25 minutes, or until golden.  Best served warm (but cold in the middle of the night works too), topped with a dollop of freshly whipped, sweetened cream.  Serves 6.
