Cleveland Brownies
          

Homemade dark chocolate brownies infused with orange topped with an orange cream cheese frosting.


      Ingredients

For brownies:

4 squares (1 ounce each) unsweetened chocolate

1 cup (2 sticks) butter

4 eggs

2 tablespoons orange juice concentrate from a can

1 1/2 cups sugar

1 tablespoon grated orange peel

1 cup flour

1/4 teaspoon salt

Frosting:

4 ounces cream cheese, softened

1/4 cup (1/2 stick) butter, softened

2 tablespoons orange juice concentrate from the can

2 cups confectioners' sugar

2 tablespoons orange zest for garnish


      The Recipe

Preheat oven to 350 degrees F.  Butter and flour a 9" x 13" pan.  In a double boiler over low heat, melt chocolate and butter.  Let cool slightly.

 

In a large bowl, beat eggs and orange juice concentrate together with a wire whisk.  Gradually beat in sugar until well incorporated.  Stir in orange peel and melted chocolate mixture.  Blend in flour and salt.  Pour into prepared pan and bake about 20 minutes, or until inserted toothpick comes out clean.  Let cool completely in pan before frosting.

 

For frosting:  In a food processor or by hand, cream together cream cheese, butter, orange juice concentrate and confectioners' sugar.  Frost cooled brownies and sprinkle orange peel on top.  Makes about 24 2" x 2" squares.
