Two Ingredient Red Velvet Cookies
          

What a conversation piece!  And they're great - part chewy, part crunchy and pretty to look at.


      Ingredients

1 red velvet cake mix (not the kind with pudding in the mix)

1 tub (8 ounces) Cool Whip 

1/2 cup powdered sugar


      The Recipe

Preheat oven to 350 degrees F.  In a large bowl, mix together cake mix and Cool Whip by hand.  It takes a little muscle.  The dough is very sticky, so coat your hands in the powdered sugar before rolling 1" balls.  Dip balls in the sugar.  Place 2" apart on ungreased baking sheets and bake about 12 minutes, or until edges are slightly firm and middle is slightly soft.  Allow to cool on cookie sheet a couple of minutes before transferring to cooking racks.  Makes about 36.
