Peanut Butter Smoochies

Melt-in-your-mouth puffs of peanut butter meringue.


3 egg whites, room temperature

1/4 teaspoon cream of tartar

3/4 cup sugar

1 teaspoon vanilla extract

3/4 cups smooth peanut butter (not homemade)

      The Recipe

Preheat oven to 300 degrees F.  Line two baking sheets with parchment paper.

Beat together egg whites and cream of tartar with electric mixer until soft peaks form.  Slowly beat in sugar until mixture is stiff.  Quickly fold in vanilla and peanut butter.  Drop by about half teaspoonfuls onto baking sheets and bake 25 minutes or until lightly browned.  Allow to cool slightly before serving.  Makes 4 dozen.
