Berried Treasure

Blackberries and raspberries smothered in Kahlua mascarpone whipped cream and topped with unsweetened chocolate.


1 1/2 pints (about 3 1/2 cups) fresh berries (I prefer a mix of blackberries and raspberries)

2 tablespoons powdered sugar

8 ounces mascarpone cheese, softened

3 tablespoons Kahlua

1 cup heavy whipping cream

1/3 cup sugar

Unsweetened dark chocolate

      The Recipe

Wash berries in colander and spread out on paper towels.  Pat dry with more paper towels (the drier they are, the less they'll bleed).  Sprinkle with powdered sugar to absorb any additional moisture.

In a medium bowl, mix together mascarpone and Kahlua.  In a large bowl, whip cream with an electric mixture until soft peaks form.  Add sugar and continue whipping until there are stiff peaks.  Gently fold mascarpone mixture into whipped cream.  Carefully mix in berries, reserving a handful for garnish.  Spoon into parfait glasses, wine goblets or even martini glasses.  Top with a few berries and some shaved or grated unsweetened chocolate.  Serves 4 - 6.
