Old West Arbuckle Custard Pie
Arbuckle was known as 'the coffee that won the West'. I came up with a custard pie that would make any cowboy very happy.
Ingredients
3 eggs
1 1/2 cups milk
1/2 cup light cream or half-and-half
1 teaspoon vanilla extract
1/2 cup sugar
3 tablespoons instant coffee dissolved in 1 tablespoon hot water
9" unbaked deep dish pie shell
Whipped cream, beaten lightly with a little sugar
Coffee beans for garnish
The Recipe
Preheat oven to 400 degrees F. In a medium bowl, whisk the eggs. Add milk, cream, extract, sugar and coffee. Mix well. Place pie crust on baking sheet and pour in the custard mixture. Bake 40 minutes, reduce heat to 300 degrees F. and continue baking for another 30 - 40 minutes or until set (it may seem slightly jiggly, but as it cools, it will firm up). Allow to cool completely. Top with whipped cream sauce and coffee beans. Store in refrigerator. Serves 6.
