Chocolate-Oatmeal McIntosh Pie
Not being a lover of traditional apple pie, I came up with this recipe that even I kind of like.
4 large eggs
1 cup sugar
2 tablespoons flour
1/8 teaspoon salt
1/2 cup honey
1/2 cup light corn syrup
2 tablespoons melted butter
1 cup quick-cooking oats
1/2 cup semi-sweet chocolate chips
3 McIntosh apples, diced
1 deep-dish pie crust (9"), unbaked
Optional: Unsweetened whipping cream for a topping
1 teaspoon vanilla extract
Preheat oven to 350 degrees F.
In a large bowl, beat eggs. In a small bowl, mix together sugar, flour and salt. Stir into eggs.
Add honey, corn syrup, vanilla and melted butter. Fold in oats, chocolate chips and apples. Pour into pie shell and bake 1 hour and ten minutes, or until set. Allow to cool. Top with whipped cream. Serves 6 - 8.
