Ingredients
2 cups sugar
1 cup light corn syrup
2 cups pecans, very coarsely chopped
2 tablespoons butter
1 teaspoon salt
1 1/2 teaspoons cayenne pepper
1 teaspoon baking soda
The Recipe
In a large, heavy sauce pan, combine sugar and corn syrup. Cook over medium heat, stirring, until it turns a deep caramel color (it will take 15 - 20 minutes). Stir in pecans and remove from heat. Add butter, salt and cayenne. Then stir in baking soda.
Spread mixture onto a buttered 11" x 17" baking pan with sides. Allow to cool and harden, uncovered, at room temperature for an hour. With a small, sharp knife, chip out a corner of the brittle. Then, with your hands, break it all up. Store in an air-tight container at room temperature.
