Dark Chocolate Cashew Cake with Kahlua Icing
          

A dense and delicious combination of dark chocolate and salty cashews. 


      Ingredients

1 stick butter, room temperature

3/4 cup brown sugar

1 egg

1/2 teaspoon vanilla extract

2 tablespoons Kahlua

1 cup finely chopped salted cashews

1/2 cup dark chocolate chips

6 tablespoons flour

1/2 teaspoon baking powder

Icing:

1 1/2 tablespoons soft butter

1 cup powdered sugar (no need to sift)

2 tablespoons Kahlua

Whole cashews for garnish


      The Recipe

Preheat oven to 350 degrees F.  Butter and flour a 10" pie plate.

Place butter, brown sugar, egg, vanilla, milk and Kahlua in a food processor and process until smooth.  In a medium bowl, combine dry ingredients - cashews, chocolate chips, flour and baking soda.  Add processed ingredients to dry mixture and mix.  Spoon batter evenly into prepared pie plate and bake 25 minutes, or until toothpick comes out clean.  Allow to cool down slightly.

Make icing.  In a small bowl, combine butter, powdered sugar and Kahlua.  Ice cake.  Serves 6.
