Plum Cornbread Cobbler
          

Delicious way to use ripe plums before they go bad.


      Ingredients

1/2 cup flour

1/2 cup sugar

8 plums, sliced

For cobbler topping:

1 1/2 cups flour

1/2 cup cornmeal

1/3 cup sugar

2 teaspoons baking powder

12 tablespoons cold butter, sliced

1 cup heavy cream

Additional whipped cream for topping


      The Recipe

Preheat oven to 375 degrees F.  In a small bowl, combine flour and sugar.  Arrange half of plum slices in a 10" pie plate.  Sprinkle on half of the flour mixture.  Repeat with the remaining plums/flour  mixture.

Mix together flour, cornmeal, sugar and baking powder in a food processor.  Add butter and pulse until crumbly.  With processor running, pour in cream and quickly mix.  Place spoonfuls of the cornmeal mixture on top of the plumb, leaving a hole in the middle.  

Bake 45 minutes.  Top with unsweetened whipped cream.  Serves 8.
